I have spent years studying nutrition, weeding through all the data and multiple studies, which so often seemed contradictory! How can the results of one study, differ so greatly from those of another? Should I be Vegan? Vegetarian? A Raw Foodist? Should I eat Organic? or Local? Saturated fats, unsatured fats or no fats at all? Is Cholesterol really the scourge of the century? or the building block for nearly every tissue in my body? How do I "eat right for my blood type"? And why am I so very tired all the time??
These are all among the questions that have bothered me for years. With so much information, the biggest question remained, "Whom do I trust?"
I first learned of the Weston A. Price Foundation from the chef for my Permaculture Certification Course. She had tried everything, and finally come to the foundation. As she first told me, Weston A. Price was a dentist in the early 1900's who watched as from one generation to the next, the population began to physically degenerate. Parents with few cavities, good health and fine physical structure were bringing in children who had multiple cavities, dental structures which could not fit their teeth, and diseases such a tuburculosis which had never before been prevalent.
His first clue came when he realized that the children were no longer eating their traditional foods.
Dr. Weston Price, began to study isolated nonindustrialized peoples accross the world, establishing the parameters of human health and determining the optimum characteristics of human diets. Dr. Price's research demonstrated that humans achieve perfect physical form and perfect health generation after generation only when they consume nutrient-dense whole foods and the vital fat-soluble activators found exclusively in animal fats.
I am currently serving as a Chapter Leader of the Weston A. Price Foundation for the Bozeman area. As such, I will provide Nutritional counseling and connections for those who wish to pursue holistic nutrition. I will soon be providing lists of local producers.
